Great macros! Never had gizzards, but love liver. I’ve heard they are kinda chewy. But you make me want to go try some. My local Walmart was out of my chicken liver when I went and only had 2 pkgs of gizzards.

Gizzards are good!! Chewy yes. But good. I’ve had them Nigerian style, many times.

Yea they taste pretty good! I enjoyed it more than I thought I would... cooked it twice yesterday. But not only the macros is crazy but the nutrients in it!
But a tip if you want to chew less. If you have a cleaver and a cutting board you can lightly ground it. It doesn’t have to cut into pieces it just has to have lots of cuts through. That makes it much more enjoyable I think.... or you can smash it like a country fried steak before cooking.

Just be aware that if you have a high cholesterol history that both liver and gizzards are very high in cholesterol— one of those portion control and moderation foods.

Kenna from my understand of dietary cholesterol is that you can’t even absorb all of it. And the ones that you do absorb your body doesn’t produce. So the lvls doesn’t really change. What happens is foods that are high in cholesterol is also high in saturated fats. Abs that’s where it would raise your cholesterols. Foods like shrimp, eggs, liver and apparently this lol cuz I was unaware that it was high in cholesterol has minimal affect on your lvls. Unless you have sources that I haven’t seen.

@Kenna. The more cholesterol you eat the less your body will make, keeping high cholesterol down. It’s the opposite of what we’ve been told in the past. Maybe the elite WANT us unhealthy. Keeps the rich Drs rich. Also statins are associated w higher risk of heart attacks, and diets rich in healthy fats and protein keep us healthy but you won’t hear that from the medical professionals.

you can simmer them in chicken stock for a bit or soak them in buttermilk overnight to make the less chewy

This post caused me to look up if I am actually allowed to eat gizzards or livers, and unfortunately I found conflicting information about whether it’s anti inflammatory or not. All I know for sure is I miss liver something awful.

Nigerian style is stewing with onions, garlic, Nigerian spices, and tomatoes. I’ve never cooked them that way, I’ve eaten them from a friend who is Nigerian. Unsure of exact spice he uses but it’s delicious aside some boiled plaintain. 😋😋
