I didn’t plate these well, but they are homemade mini protein waffles with cool whip and blueberries. 🥰 The waffles by themselves make a great snack, too. 😉

Recipe: 2 cups oat flour (just blend some oats), 2 cups cottage cheese (or the entire tub), 6 eggs. You can add cinnamon, chia seeds, vanilla, almond flavoring, etc. if desired. Blend until smooth. Add 1/4 cup batter to oiled mini waffle maker. Top with favorite toppings. These waffles are heavy and dense and wonderful. 🥰
