Okay, it's been over 8 weeks since the state of California started the stay at home order. I actually started the week before when counties in the Bay Area started early. I need to figure out a better way to eat. I didn't think this would last so long. I have eaten lots of what was in the pantry and freezer so need to replace that food with healthier food. I still have 3 cans of corned beef hash but otherwise it's beans and rice, tuna, soup in the cupboard. I have some frozen corn and peas in the freezer. Still have one chicken breast in the freezer, but they may go to the cat who is sick. Have some bacon and even some salami in the freezer. I shouldn't eat either. I may try to eat mostly vegetarian once the stuff with meat in the freezer is gone. With all the problems with the meat packing places, the prices are going up and I think soon there won't be much of a supply. I did go vegan for 21 days in January. I think vegetarian would be easier, being allowed fish and dairy. Canned tuna is really the only fish I eat. So I'm working on a shopping list and looking up recipes. Saw a recipe for "lentil Loaf" kinda like meat loaf but with lentils. I have 2 bags of lentils in the cupboard and find them very boring.

Lentils. I love green lentils. There is a recipe for lentil sloppy joes that is wonderful. Add lot of flavor. I also made lentil soup flavors with bacon. I've been wanting to try making lentil 🍔. Hugs to you. I don't know i could've done 2 months of stay at home.

Healthy is good. Sounds like a great plan. Will you eat egg or eggwhites? Plan your shopping and go. Are allergies still bad or can you get some walks in. Those help with healthy

Tatauu - the lentils I have are kind of greenish brown. The bag just says "lentils". I'm not really crazy about them. Never ate them before I tried to figure out how to get more protein in my diet from non animal sources. I usually put a couple tablespoons of them in stews or soups. I may look for the lentil loaf recipe again. Thanks DP - lately, whatever I try lasts 2 days at the most. First it was to do 30 minutes of housework every morning. 2 days. Then I got lazy again. I basically just worry about keeping the kitchen clean and doing laundry. I should vacuum every day, but don't. The eating plan is tough when I really don't like to go to the grocery store. Liv - I will eat eggs and dairy. My allergies aren't as bad as I expected. Maybe I really don't need the shots anymore. I just make sure I use the 2 nasal sprays and take Zyrtec and 2 or 3 times a week I use the sinus rinses. I can walk if I get out early enough, but I've been getting lazy early in the morning. Probably due to the weird sleeping hours. Thanks for the suggestions Pmorgan - I need to like beans more so I keep trying.

Hang in there! I'm glad you are posting. It is good to keep connected for sure. I hope you found some interesting things to do with your lentils. I make a coconut milk, red curry soup with lentils that is so, so yummy. Cheering for you!!!
